New Zealand Salmon with Sweet and Sour Sauce

Serves: 4

Method

  • Season the salmon skin with flakey sea salt (approximately ½ teaspoon per portion).
  • Heat a large non-stick frying pan over medium to high heat.
  • Add the cooking oil and salmon to the hot pan, skin-side down, and cook for 3-4 minutes skin side. Skin should be crisp, flip to cook the under side of the salmon for another 1-2 minutes or until cooked through. 
  • When cooked remove from the pan and place on 4 serving plates with sweet and sour sauce.

 

Sweet and Sour Sauce

  • Heat the oil in a small saucepan, lightly sauté onion, garlic and ginger. 
  • Pour in water, hoisin sauce, tomato sauce/ketchup, pineapple, sugar and vinegar. 
  • Adjust seasonings as needed. 
  • Add in julienned red pepper and cook on high heat for 3 to 5 minutes or until mixture thickens.
