New Zealand King Salmon Congee


Serves: 4 


  • Mix all the salmon marinade in a mixing bowl, place the salmon in the bowl & rub the marinade over the salmon. Leave the salmon to marinade until required. 
  • Drain the soaked rice and place in a medium pot with the water and chicken stock & bring to the boil, stirring regularly. 
  • Once rapidly boiling, bring the heat down to low and allow to simmer stirring occasionally until it reaches a thick consistency similar to porridge. Approximately 45 minutes on low heat.
  • As the congee reaches your desired consistency, drop in the salmon fillets. Watch closely and turn up the heat again. Once the salmon is entirely cooked (about 3-4 minutes) turn off the heat.
  • Serve the congee into 4 individual serving bowls & top with the cooked salmon and scallions. To the side serve light soy sauce and white pepper.
