New Zealand Greenshell Mussel Zucchini Fritters (Paleo friendly, Gluten Free)

Serves: 4 (makes approximately 12 fritters) 

Method


Mussel fritters

  • Place mussel meat into a food processor and chop (keep slightly chunky for texture). If using live mussels place the unopened mussels in the kitchen sink and pour hot water over them, this makes them easier to open. Then open the shells, discard the beard, and then remove the mussel from the shell. You could also use the mussel meat from thawed half shell mussels.
  • Place the mussels into a large mixing bowl.
  • Grate the zucchini/courgette and place into a colander.
  • Sprinkle with a few pinches of sea salt and mix through. Allow to sit for 10 minutes.
  • Squeeze out all the moisture from the zucchini/courgette with your hands to remove as much liquid as possible and then place into the large mixing bowl with the mussels.
  • Add parsley, spring onion, lemon zest, eggs and almond meal. Season to taste with salt and pepper.
  • Mix well until combined. At this stage it's good to test cook a fritter to make sure it holds together well. Add a touch more almond meal if you need it.
  • Cook fritters by spooning large tablespoons of the mixture into a non-stick fry pan over a medium heat using a little avocado or coconut oil. Flatten down to form a fritter/patty, cook for 2 minutes each side or until cooked through and golden brown.
  • Serve hot with lemon herb mayonnaise.   


Lemon Herb Mayonnaise 

  • Using a stick blender or whisk, mix together the egg yolks and lemon juice in a mixing bowl. While the blender is going (or whisking) slowly trickle in the oil, the emulsion will gradually thicken to a smooth mayonnaise consistency.
  • Mix in the parsley and chives, season to taste with salt and pepper.
