500gm (17.5oz) New Zealand King Salmon - fillets (1/2 to 3/4 inch thick)
1 tablespoon Cracked Pink Peppercorns
2 tablespoons Unsalted Butter
1/8 tablespoon Salt
 Micro Watercress to garnish
