36 New Zealand Pacific Oysters - half shell
200gms (7oz) Fresh Watermelon - 10mm thick slices, skin removed.

Ingredients - Chilli Lime Dressing

80mls Lime Juice
2 Small Red Chillis - seeds removed, finely diced
1/2 clove Fresh Garlic - minced
1 tablespoon Fish Sauce
1 tablespoon Soy sauce
1 tablespoon Vegetable Oil
